Cuties® Clementine Cranberry Muffins

  1. Muffins: Preheat oven to 375°F. Line 12 muffin cups with paper liners. In a large bowl, whisk flour with sugar, baking powder, zest, baking soda and salt until well combined; set aside.
  2. In a separate bowl whisk egg, milk, clementine juice, oil and vanilla.
  3. Stir wet ingredients into dry ingredients just until moistened. Fold in cranberries.
  4. Scoop into muffin cups.
  5. Topping: Stir sugar with zest. Sprinkle on each muffin top.
  6. Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean. Cool in pan on rack for 5 minutes. Transfer to rack and cool completely.
