- Spiced Syrup: In saucepan, combine sugar, 1 cup water, vanilla, cinnamon stick, cloves and star anise; bring to boil over medium heat. Reduce heat to medium-low and simmer for about 14 minutes or until sugar dissolves and mixture turns a light golden color. Strain, reserving cinnamon, cloves and star anise.
- Meanwhile, cut ends off clementines. Using sharp knife, cut off peel and outer pith of each clementine. Tightly pack clementines, reserved cinnamon, cloves and star anise into 2-cup Mason jar. Pour hot syrup over top. Seal with lid and screw band. Refrigerate for at least 8 hours or up to 5 days.
Clementines are peeled and packed into jars, then topped with a spiced simple syrup. They make an elegant stand-alone dessert, or you can serve them over ice cream, yogurt or spice cake.
