  1. Zesty Dressing: Whisk cider vinegar with lemon juice, mustard, honey, salt and pepper. While whisking, slowly drizzle in olive oil until blended.
  2. Toss spinach with quinoa, clementine segments, pomegranate seeds, red onion, olives, and pistachios with Zesty Dressing.

Tip: Switch up the grains and substitute barley, farro or brown rice for the quinoa.
