Ingredients
- 3/4 cup Cuties® Clementine juice (about 6 or 7 clementines)
- 2 tbsp soy sauce
- 2 tsp cornstarch
- 1 tsp sesame oil
- 1 tsp honey
- 2 tbsp vegetable oil
- 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
- Peel of 1 Cuties® Clementine, cut into 2-inch strips
- 1/4 tsp each salt and freshly ground pepper
- 1 red pepper, cut into 1-inch cubes
- 1 tbsp minced fresh gingerroot
- 2 Cuties® Clementines, peeled, segmented and halved
- 2 green onions, sliced

Mix together clementine juice, soy sauce, cornstarch, sesame oil and honey until combined; set aside. In large skillet or wok, heat oil over medium-high heat; sauté chicken, clementine peel, salt and pepper for 3 to 5 minutes or until chicken starts to brown.

Add red pepper and ginger to skillet; stir-fry for 1 or 2 minutes. Stir in clementine juice mixture; bring to boil. Cook for 3 to 5 minutes or until chicken is cooked and sauce has thickened. Stir in clementine segments and green onions. Serve immediately.
Serve this stir-fry over steamed rice, quinoa or soba noodles.
The clementine juice adds sweetness and tang to this tasty dish.
