Vanilla Clementine Protein Pancakes with Clementine Honey Syrup

Pass the syrup! These protein-packed Cuties® clementine pancakes will help you power through the most important meal of the day.

Ingredients

For the pancakes:
- 1 cup oat flour
- 2 scoops plant-based vanilla protein powder
- 1 teaspoon baking powder
- pinch salt
- 2 eggs
- 4 tablespoon low-fat Greek yogurt
- 2 clementines, juice and zest
- ¾ cup water
- cooking oil spray

For the syrup:
- 1 cup honey
- 2 tablespoons unsalted butter
- 1/2 teaspoon ground cinnamon
- 2 Cuties clementines, juice and zest

For the pancakes: Add oat flour, protein powder, baking powder, and salt to a mixing bowl and whisk to fully combine.

Add eggs, yogurt, clementine juice and zest, and water to another bowl. Whisk to combine.

Add the wet ingredients to the dry ingredients and whisk to fully combine.

Heat a non-stick skillet over medium heat. Use cooking oil spray to coat pan. Add about ¼ cup batter to the skillet and cook until bubbles from and burst. Use a spatula to flip the pancake and cook until golden brown (about 30-45 seconds more).

Remove pancake and place on a baking sheet. Keep the baking sheet in a warm oven until ready to serve.

Serve pancakes topped with Clementine Honey Syrup and clementine segments.

For the syrup: Zest clementines. Set aside.

Add honey, butter, cinnamon, and juice from clementines to a medium sauce pan. Heat over medium heat until mixture boils. Reduce heat to medium-low and continue cooking for 3-5 minutes, stirring frequently to reduce mixture.

Remove from heat and stir in clementine zest. Cool slightly before serving. Store refrigerated in an airtight container.
