Cuties Clementine Apricot Glazed Chicken

Ingredients

  • 6 Cuties® Clementines, divided
  • 1/4 cup apricot jam, melted
  • 2 tbsp olive oil
  • 4 tsp apple cider vinegar
  • 2 cloves garlic, minced
  • 4 chicken breasts (bone-in and skin-on)
  • 1 red onion, quartered
  • 2 sprigs rosemary, cut in half
  • 3/4 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp freshly ground pepper

Directions

    Preheat oven to 375°F. Juice and zest 1 clementine and add to a bowl. Whisk in apricot jam, olive oil, vinegar and garlic. Toss in chicken red onions and rosemary. Season with salt, paprika and pepper.

    Place chicken, red onions, rosemary and remaining clementines in a greased small baking dish. Pour over any remaining glaze. Bake for 45 minutes or until golden brown and cooked through.

Tip: Substitute chicken thighs, if desired.
