Grilled Sesame Clementine Chicken Skewers

These Grilled Sesame Cuties® Clementine Chicken Skewers are stacked tall with Asian-inspired flavors. Sweet Cuties® clementine juice and zesty soy sauce come together to create the perfect flavorful marinade in a dish that’s so easy to make on a weeknight.

Ingredients
- 1 cup clementine juice (6-7 Cuties® clementines)
- 1 tablespoon low sodium soy sauce
- Cornstarch slurry (1 teaspoon cornstarch + 1 teaspoon water)
- 2 teaspoons ground ginger
- 1 tablespoon brown sugar
- 1 teaspoon Cuties® clementine zest
- 1½ pounds chicken tenderloins
- 20 clementine slices (about 6 clementines)
- 3 carrots, peeled and cut into long ribbons with peeler
- sesame seeds – white, black, or both
- 3 scallions, thinly sliced

If using wooden skewers, soak them in water for 30 minutes before cooking.

Place clementine juice, soy sauce, sugar, ginger, and zest in a small sauce pan and bring mixture to a boil over medium heat.

Place cornstarch and water in a small bowl to create cornstarch slurry mixture. Stir to fully combine and then add to sauce pan. Stir the sauce until it thickens and remove from heat.

Cut each tenderloin piece into two pieces. Thread each skewer with a carrot ribbon, a clementine disk folded in half, and a piece of chicken. Repeat one time.

Brush each completed skewer with sauce and heat grill or grill pan over high heat and brush with vegetable oil. Grill each side of the skewers for 3-5 minutes. Remove skewers from heat and brush again with sauce.

Sprinkle clementine chicken skewers with sesame seeds and sliced scallions before serving.
