Ingredients
- 8 Cuties® Clementines, peeled and sliced crosswise
- 3 small heirloom tomatoes, sliced
- 1/4 cup thinly sliced red onion
- 1/3 cup pomegranate seeds

Basil Vinaigrette:
- 1/3 cup packed fresh basil
- 1/4 cup olive oil
- 2 tbsp white wine vinegar
- 1 Cuties® Clementine, juiced (about 2 tbsp)
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper

Arrange clementine, tomato and onion slices in overlapping concentric circles on serving plate. Sprinkle pomegranate seeds over top.

Basil Vinaigrette: In small food processor, combine basil, oil, vinegar, clementine juice, salt and pepper; pulse until smooth.

Drizzle vinaigrette over salad.
Add sliced bocconcini cheese or crumbled feta cheese to the salad for added protein.
Substitute dried cranberries for pomegranate seeds if desired.
Use vine-ripened tomatoes if heirloom tomatoes are not available.
