Cuties® Clementine Frangipane Brûlée Tarts

Ingredients

  • 3 tbsp Cuties® Clementine juice
  • 1/3 cup unsalted butter, at room temperature
  • 1/3 cup granulated sugar
  • 1/4 tsp salt
  • 2/3 cup ground almonds
  • 1 egg
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla
  • Tarts:

    • 3 Cuties® Clementines, peeled
    • 2 tbsp granulated sugar
    • 12 frozen tart shells (3 inch), thawed according to package directions

Directions

    Tarts: Slice each clementine crosswise into 4 slices. Place on foil-lined baking sheet. Sprinkle each slice with 1/2 tsp sugar. Broil for 4 or 5 minutes or until caramelized; let cool.

    Using electric mixer, beat together butter, sugar and salt for 3 to 5 minutes or until light and fluffy. Add ground almonds; mix for about 2 minutes or until smooth. Beat in egg. Add clementine juice, flour and vanilla; mix until smooth.

    Preheat oven to 375°F. Fill tart shells evenly with frangipane filling; place on baking sheet. Bake in middle rack of oven for about 25 minutes or until pastry is golden brown and filling is puffed and golden.

    Place slice of caramelized clementine on each tart. Serve warm or at room temperature.
