Cuties Clementine Quinoa Salad

Ingredients

  • Zesty Dressing:

    • 2 tbsp apple cider vinegar
    • 1 tbsp lemon juice
    • 1 tsp each Dijon mustard and honey
    • 1/2 tsp salt
    • 1/4 tsp freshly ground pepper
    • 1/4 cup olive oil
  • Salad:

    • 6 cups baby spinach or arugula
    • 1/2 cup quinoa, cooked according to package directions and cooled
    • 4 Cuties® Clementine, peeled and separated into segments
    • 1/2 cup pomegranate seeds
    • 1/4 cup thinly sliced red onion
    • 1/4 cup sliced, pitted green olives
    • 1/4 cup shelled pistachios

Directions

    Zesty Dressing: Whisk cider vinegar with lemon juice, mustard, honey, salt and pepper. While whisking, slowly drizzle in olive oil until blended.

    Toss spinach with quinoa, clementine segments, pomegranate seeds, red onion, olives, and pistachios with Zesty Dressing.

Tip: Switch up the grains and substitute barley, farro or brown rice for the quinoa.
